10 Minute Simple Egg Fried Rice

A quick and satisfying egg fried rice dish, perfect for using leftover rice.

Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 2 tablespoons oil (vegetable or sesame)
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a pan over medium heat.
  2. Add the eggs to the hot pan and scramble them until fully cooked.
  3. Throw in the mixed vegetables and sauté for 2-3 minutes until tender.
  4. Add the cooked rice, soy sauce, and scrambled eggs to the pan. Stir well.
  5. Continue cooking for another 2-3 minutes, stirring occasionally.
  6. Garnish with chopped green onions and season with salt and pepper to taste.

Notes

Use cold, leftover rice for the best texture. Experiment with different vegetables and soy sauces for varied flavor profiles.
