Deliciously warm crepes filled with sautéed apples and cinnamon, perfect for a cozy breakfast or brunch.

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups apples, peeled and chopped
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • Powdered sugar for serving

Instructions

  1. In a mixing bowl, whisk together the flour, eggs, milk, melted butter, and vanilla until smooth. Let the batter rest for 20 minutes.
  2. In a skillet over medium heat, sauté the chopped apples with brown sugar, cinnamon, and lemon juice until tender.
  3. Heat a non-stick pan over medium heat. Pour in a small amount of batter, swirling the pan to coat it evenly. Cook until the edges are lightly browned, then flip and cook the other side.
  4. Continue with the remaining batter, stacking the cooked crepes on a plate.
  5. To serve, fill each crepe with the apple mixture, fold them gently, and dust with powdered sugar.

Notes

For a special twist, pair with whipped cream or maple syrup. Store leftovers in an airtight container in the refrigerator for up to 2 days.
