  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine the flour, granulated sugar, baking powder, cinnamon, and salt in a bowl.
  3. Whisk the milk, egg, melted butter, and vanilla extract together in another bowl.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in the blueberries gently.
  6. Scoop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 15-20 minutes, or until golden brown.
  8. Prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  9. Glaze the fritters while still warm.
