Delightful bakery-style blueberry muffins, tall and fluffy with juicy blueberries in every bite.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 tablespoon flour (for dusting blueberries)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Mix the melted butter, milk, eggs, and vanilla extract in another bowl until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Toss the blueberries in a tablespoon of flour to prevent them from sinking.
  6. Fold the blueberries into the batter gently.
  7. Scoop the batter into the muffin tin, filling each cup about 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool for a few minutes before transferring to a wire rack.

Notes

Store any leftover muffins in an airtight container at room temperature for up to 3 days.
