A delightful twist on classic French toast featuring caramelized bananas, rum, and pecans, perfect for cozy Sunday mornings.

  • 12 slices brioche bread (day old is best)
  • Unsalted Butter for frying (about 6 tablespoons or more, as needed)
  • Whipped cream for serving (optional)
  • 4 large eggs
  • 2 tablespoons granulated sugar
  • 1 1/2 cups half and half or whole milk
  • 1 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons unsalted butter
  • 1/2 cup packed brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup dark rum or 1 teaspoon rum extract
  • 1/4 cup chopped pecans (optional)
  • 2 firm bananas, peeled and sliced

Instructions

  1. Preheat the oven to 300 degrees Fahrenheit.
  2. Whisk together the eggs, granulated sugar, half and half, cinnamon, and vanilla extract in a mixing bowl.
  3. Dip each slice of brioche into the custard mixture, soaking for about 15 seconds on each side.
  4. Cook the soaked slices in a skillet with melted butter until golden brown, about 3-4 minutes per side.
  5. Make the banana topping by melting butter in a separate skillet and adding brown sugar, maple syrup, and rum until dissolved.
  6. Stir in the sliced bananas and pecans, cooking for 2-3 minutes until tender.
  7. Plate the French toast and spoon the banana topping over it.

Notes

Day-old brioche works best for this recipe. Using rum extract can offer a non-alcoholic alternative.
