Deliciously soft and fluffy blueberry muffins, perfect for breakfast or a snack.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin.
  2. Combine the all-purpose flour, granulated sugar, baking powder, and salt in a large bowl.
  3. Whisk together the vegetable oil, egg, vanilla extract, and milk in another bowl.
  4. Pour the mixture of wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the fresh blueberries until evenly distributed.
  6. Fill the muffin cups about two-thirds full with batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

For extra moisture, add a tablespoon of sour cream or yogurt. Sprinkle sugar on top before baking for a crunchy top.
