Experience the joy of baking with these fluffy cinnamon rolls topped with gooey cream cheese frosting, perfect for any occasion.

Ingredients

  • 45 cups (520g-650g) all-purpose flour, spooned and leveled
  • 1/4 cup (50g) granulated sugar
  • 2 1/4 teaspoons (1 package) instant yeast
  • 1/2 teaspoon salt
  • 3/4 cup (180mL) water
  • 1/2 cup (120mL) whole milk
  • 1/4 cup (60g) unsalted butter, cut into 4 slices
  • 1 large egg, at room temperature
  • 6 tablespoons (85g) unsalted butter, very soft
  • 3/4 cup (150g) packed brown sugar, light or dark
  • 1 1/2 tablespoons ground cinnamon
  • 4 oz (115g) full fat block cream cheese, room temperature
  • 5 tablespoons (70g) unsalted butter, room temperature
  • 1 1/2 cups (195g) powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Combine Dry Ingredients: In a large bowl, combine 3 cups of flour, sugar, yeast, and salt. Whisk to combine and set aside.
  2. Warm the Wet Ingredients: In a medium microwave safe bowl or cup, combine water, milk, and sliced butter. Microwave until the butter just melts and mixture feels warm but not hot.
  3. Mix in the Egg: Whisk the egg into the water mixture to combine.
  4. Create the Dough: Pour the wet ingredients over the flour mixture. Using a wooden spoon, mix until you have a very thick and sticky dough.
  5. Add More Flour: Add another cup of flour and mix until it starts coming together into a ball.
  6. Knead the Dough: Knead the dough, adding flour as needed until it’s smooth, elastic, and slightly tacky.
  7. Rest the Dough: Cover the dough and let it rest for about 20 minutes.
  8. Roll Out the Dough: Roll the rested dough into a 14×10 inch rectangle on a floured surface.
  9. Spread the Dough: Spread softened butter over the dough, sprinkle with sugar, then cinnamon.
  10. Roll Up the Dough: Roll it tightly into a log from the longer side.
  11. Prepare the Log: Cut about 1/2 inch off each end of the log.
  12. Cut the Rolls: Cut the log into 12 even rolls.
  13. Place in Baking Dish: Arrange the rolls cut side up in a baking dish.
  14. Let the Rolls Prove: Cover and set aside for about 45 minutes.
  15. Bake the Rolls: Bake for 25-30 minutes at 350°F until golden brown.
  16. Prepare the Icing: Combine icing ingredients in a bowl and cream until smooth.
  17. Spread the Icing: While warm, spread the icing on top of the rolls.

Notes

Serve warm with coffee or tea. Store in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
