  • 4 large bell peppers
  • 1 pound ground beef or Italian sausage
  • 1 cup cooked rice
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup onion, chopped
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef or Italian sausage with chopped onions until browned.
  4. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Fill each bell pepper with the meat mixture and top with mozzarella cheese.
  6. Place the stuffed peppers in a baking dish and cover with foil.
  7. Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes.
  8. Garnish with fresh basil before serving.
