Delightful blueberry biscuits that bring warmth and childhood memories with every bite.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup fresh blueberries
  • 3/4 cup heavy cream
  • 1/4 cup powdered sugar for glazing
  • 1 tablespoon milk (for glaze)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk the flour, baking powder, and salt together in a mixing bowl.
  3. Add the cold, cubed butter and cut it in until the mixture resembles coarse crumbs.
  4. Fold in the fresh blueberries gently.
  5. Pour in the heavy cream and stir until just combined.
  6. Turn the dough out onto a floured surface and knead gently a couple of times.
  7. Roll it out to about 1 inch thick and cut out rounds with a biscuit cutter.
  8. Bake for 15-20 minutes or until golden brown.
  9. Mix the powdered sugar and milk to prepare the glaze.
  10. Drizzle the glaze over warm biscuits and enjoy!

Notes

Use cold butter for flakiness, and be gentle when folding in blueberries to avoid crushing them.
