Delicious muffins with a rich cream cheese swirl and juicy blueberries, perfect for breakfast or as an afternoon snack.

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Prepare the cream cheese and butter mixture until smooth.
  4. Add the eggs, milk, and vanilla to the cream cheese mixture and mix well.
  5. Combine the wet ingredients with the dry mix, stirring gently.
  6. Fold in the blueberries without crushing them.
  7. Fill the muffin cups about two-thirds full with batter.
  8. Bake for 20-25 minutes until golden and a toothpick comes out clean.
  9. Cool in the tin for a few minutes before transferring to a wire rack.
