Blueberry Swirl Yogurt Bites

Delightful frozen yogurt bites swirled with blueberry compote, perfect for a refreshing snack.

Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)

Instructions

  1. Prepare the Blueberry Compote by combining blueberries, honey, and lemon juice in a small saucepan over medium heat. Simmer for 5 minutes until blueberries soften.
  2. Thicken the Compote if needed by dissolving cornstarch in a spoonful of water, then stirring it into the blueberry mixture. Remove from heat and allow to cool completely.
  3. Mix the Greek yogurt with vanilla extract until smooth and creamy. Adjust sweetness with more honey or maple syrup if desired.
  4. Spoon the yogurt mixture into silicone molds or mini muffin tins, filling each about three-quarters full.
  5. Add a spoonful of the cooled blueberry compote on top of each yogurt portion and swirl gently with a toothpick.
  6. Freeze the molds for at least 3 hours until solid.
  7. Store the frozen bites in an airtight container in the freezer; let them sit at room temperature for 2–3 minutes before serving.

Notes

Use ripe blueberries for the best flavor and don’t skip the lemon juice for balance.
