Delightful cookies capturing the essence of Boston cream pie with rich chocolate and creamy centers.

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Creaming together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Combine the flour, baking powder, and salt in another bowl, then gradually add to the wet mixture until just combined.
  5. Stir in the chocolate chips until evenly distributed.
  6. Drop spoonfuls of the dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool completely on the baking sheet.
  9. Heat the heavy cream until just simmering, then stir in powdered sugar until smooth for the frosting.
  10. Drizzle the chocolate ganache over the cooled cookies and allow to set before serving.

Notes

To ensure perfectly soft cookies, don’t overmix the dough once the dry ingredients are added.
