A comforting Cajun twist on classic mac and cheese, featuring creamy elbow macaroni, Andouille sausage, and bold flavors of Cajun seasoning.

Ingredients

  • 8 oz elbow macaroni
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 Andouille sausage, sliced
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional)

Instructions

  1. Boil the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. Sauté the Andouille sausage in a large skillet with butter and olive oil until browned.
  3. Add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté until tender, about 3-4 minutes.
  4. Pour in the milk and stir in the cheddar cheese until melted into a velvety sauce.
  5. Season with Cajun seasoning, salt, and pepper to taste.
  6. Coat the cooked macaroni in the cheese sauce until fully mixed.
  7. For some crunch, sprinkle breadcrumbs on top (optional).
  8. Bake at 350°F (175°C) for 20-25 minutes until bubbly and golden.

Notes

Serve hot, optionally garnished with fresh parsley. Pair with a green salad or garlic bread.
