Chicken shawarma is a aromatic Middle Eastern dish featuring tender marinated chicken served in pita wraps with fresh vegetables and rich garlic sauce.

Ingredients

Scale
  • 2 lbs chicken thighs, boneless and skinless
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Pita bread or wrap
  • Vegetables (lettuce, tomatoes, cucumbers) for serving
  • Garlic sauce (store-bought or homemade)

Instructions

  1. Combine your marinade: In a large bowl, whisk together the olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, ground turmeric, ground cinnamon, salt, and pepper until they form a cohesive mixture.
  2. Marinate the chicken: Add the chicken thighs to your marinade, ensuring each piece is generously coated. Cover the bowl and refrigerate for at least 1 hour, or even overnight.
  3. Preheat for perfect cooking: When you’re ready to cook, preheat your grill or skillet over medium-high heat.
  4. Cook the chicken: Remove the chicken from the marinade and cook for about 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C).
  5. Rest the chicken: Transfer the cooked chicken to a plate and let it rest for a few minutes.
  6. Slice the chicken: After resting, slice the chicken into strips, perfect for stuffing into your pita.
  7. Assemble and serve: Serve the sliced chicken in pita bread or wraps with fresh vegetables and garlic sauce on top.

Notes

Marinating the chicken overnight enhances flavor. Use fresh vegetables for optimal crunch.
