A quick and delicious Chicken Stir Fry recipe featuring tender chicken and crisp vegetables, ideal for busy weeknights.

  • 1 lb Chicken breast
  • 2 cups Broccoli
  • 2 Carrots
  • 2 Bell peppers
  • 3 tbsp Soy sauce
  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and season with salt and pepper.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Brown the seasoned chicken in the pan until cooked through, about 5-7 minutes.
  4. Set the cooked chicken aside to keep warm.
  5. Sauté minced garlic and ginger in the same skillet for about 30 seconds until fragrant.
  6. Cook the broccoli, carrots, and bell peppers until tender-crisp, about 4-5 minutes.
  7. Combine the chicken back into the pan, pour in the soy sauce, and stir to combine, cooking for an additional 2-3 minutes.
  8. Serve hot over rice or noodles, and enjoy!

Notes

This stir fry pairs well with steamed jasmine rice or noodles. For an extra touch, add sesame seeds or green onions on top.
