A refreshing and vibrant ceviche featuring tender shrimp marinated in zesty lime juice and mixed with crisp vegetables.

Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 1/2 cup fresh lime juice
  • 1 medium red onion, finely chopped
  • 1 medium tomato, diced
  • 1 cucumber, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, finely chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Marinate the shrimp with lime juice for about 20-30 minutes until the shrimp turns opaque.
  2. Add the red onion, tomato, cucumber, cilantro, and jalapeño (if using).
  3. Season with salt and pepper to taste.
  4. Mix well and serve chilled. Enjoy your refreshing ceviche!

Notes

Best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to two days.
