Chocolate Covered Strawberry Brownies

Delicious fudgy brownies topped with rich chocolate ganache and fresh strawberries.

  • 1 cup unsalted butter
  • 2 cups sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, sliced
  • 8 ounces semi-sweet chocolate, chopped
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. Melt the butter in a saucepan over medium heat. Remove from heat and stir in the sugar until well combined.
  3. Add the eggs one by one, mixing well after each addition, then stir in the vanilla extract.
  4. Sift together the flour, cocoa powder, and salt. Gradually add to the wet ingredients, stirring until just combined.
  5. Fold in the sliced strawberries gently into the brownie batter. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs attached. Allow to cool completely in the pan.
  7. Heat the heavy cream in a saucepan until just simmering, then pour over the chopped chocolate. Let sit for a few minutes before stirring until smooth.
  8. Pour the ganache over the cooled brownies, spreading it evenly with a spatula.
  9. Allow the ganache to set at room temperature or refrigerate briefly, then slice into squares and serve.

Notes

Store brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. Freeze for up to 2 months.
