  • 2 tablespoons melted butter
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 2 ripe pears, sliced
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Mix your batter: In a bowl, whisk together flour, eggs, milk, melted butter, sugar, cinnamon, and vanilla until smooth.
  2. Heat the skillet: Heat a non-stick skillet over medium heat.
  3. Cook the crepes: Pour a small amount of batter into the skillet and swirl to coat the pan. Cook for about 1-2 minutes until the edges lift and the bottom is golden. Flip and cook for an additional minute.
  4. Melt butter for pears: In another pan, melt 2 tablespoons of butter over medium heat.
  5. Caramelize the pears: Add brown sugar and cinnamon, mixing well. Toss in the sliced pears and cook until tender, about 5 minutes.
  6. Assemble the crepes: Fill each crepe with caramelized pears and fold.

Notes

For extra flavor, try adding nuts, whipped cream, or maple syrup. Leftover crepes can be stored in the fridge for up to 2 days.
