Soft tortillas filled with a sweet cinnamon cream cheese mixture, transformed into golden brown roll-ups perfect for brunch.

Ingredients

  • 4 large flour tortillas
  • 1/2 cup cream cheese, softened
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for dusting)
  • Maple syrup (for serving)

Instructions

  1. Mix the cream cheese, brown sugar, and cinnamon until well blended.
  2. Spread the mixture over each tortilla and roll them up tightly.
  3. Whisk together eggs, milk, and vanilla extract in a large bowl.
  4. Heat a skillet over medium heat and dip each roll-up in the egg mixture.
  5. Place the roll-ups seam side down in the skillet and cook for about 3-4 minutes on each side until golden brown.
  6. Dust with powdered sugar and drizzle with warm maple syrup before serving.

Notes

Serve with fresh berries or whipped cream. Store leftovers in the fridge for 2-3 days.
