Deliciously seasoned ground beef and creamy cowboy butter blend together in crispy tortillas, topped with melted cheese for an unforgettable comfort food experience.

  • 1 pound ground beef
  • 1/2 cup cowboy butter (or compound butter)
  • 4 large tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Salt and pepper, to taste
  • 1/2 cup sour cream
  • 1 tablespoon hot sauce
  • Lime juice, to taste

Instructions

  1. Brown the beef in a skillet over medium heat until browned. Season with salt and pepper.
  2. Mix in the cowboy butter, stirring until melted and well combined with the beef.
  3. Heat another skillet over medium heat and lay a tortilla flat in it.
  4. Assemble the melted beef mixture and cheese onto one half of the tortilla, then fold it over.
  5. Crisp the folded tortillas until crispy and the cheese is melted, about 2-3 minutes on each side.
  6. Prepare the dipping sauce by mixing sour cream, hot sauce, and lime juice.
  7. Serve the tortilla melts hot alongside the creamy dipping sauce.

Notes

For extra spice, consider adding diced jalapeños. Store leftovers in an airtight container for up to 3 days.
