A vibrant salad filled with pasta, ground beef, and fresh vegetables, perfect for summer gatherings.

  • 8 ounces pasta (fusilli or rotini)
  • 1 pound lean ground beef
  • 1 bell pepper (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup corn (canned or frozen)
  • 1/2 cup red onion (diced)
  • 1/2 cup black olives (sliced)
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Begin by cooking the pasta according to package instructions. Once you’ve achieved that perfect al dente texture, drain and rinse the pasta under cold water to stop the cooking process and cool it down.
  2. In a large skillet over medium heat, add your lean ground beef. Cook until browned and thoroughly cooked through, making sure to drain any excess fat.
  3. In a large mixing bowl, combine the cooked pasta with the sautéed beef. Next, add the diced bell pepper, halved cherry tomatoes, corn, diced red onion, and the sliced black olives.
  4. Pour the Italian dressing over the gathered ingredients in your bowl. Gently toss to combine all the flavors beautifully.
  5. Give your salad a quick taste and season with salt and pepper according to your preference.
  6. To enhance the flavors, pop your Cowboy Pasta Salad into the refrigerator and chill for at least 30 minutes before serving.

Notes

For a vegetarian twist, substitute ground beef with chickpeas or tofu.
