  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 tablespoon active dry yeast
  • 1 cup warm water (about 110°F/43°C)
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1 teaspoon ground cinnamon
  • 2 tablespoons olive oil

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a bowl. Let it sit until frothy, about 5-10 minutes.
  2. Combine the dry ingredients in another bowl: flour, salt, and cinnamon.
  3. Mix wet and dry ingredients by adding the yeast mixture and olive oil to the dry ingredients. Stir to create a shaggy dough.
  4. Add dried cranberries, raisins, and walnuts, folding them gently into the dough.
  5. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  6. First rise: Place the dough in an oiled bowl, cover, and let it rise in a warm spot until doubled in size, about 1 hour.
  7. Preheat the oven to 375°F (190°C).
  8. Shape the dough into a loaf by punching it down, placing it in a greased loaf pan, and letting it rise for another 30 minutes.
  9. Bake the bread for 25-30 minutes until golden brown and sounds hollow when tapped.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
