Delicious cream cheese bars infused with the essence of carrot cake, topped with velvety cream cheese frosting.

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped nuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon in a mixing bowl.
  3. Mix granulated sugar, brown sugar, vegetable oil, eggs, and vanilla in another bowl until well combined.
  4. Combine the dry ingredients with the wet mixture and stir until just combined.
  5. Fold in the grated carrots, crushed pineapple, and optional nuts.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Prepare the cream cheese frosting by beating the softened cream cheese, powdered sugar, and vanilla until smooth.
  9. Frost the cooled bars with the cream cheese frosting.
  10. Cut into squares and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week or freeze for longer storage.
