Delicious and nutritious pancakes made with rolled oats and ripe bananas, perfect for a healthy breakfast.

Ingredients

Scale
  • 1 ripe banana
  • 1 cup rolled oats
  • 1 cup milk (or non-dairy alternative)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Butter or oil for cooking

Instructions

  1. Combine your ingredients: In a blender, combine the ripe banana, rolled oats, milk, baking powder, vanilla extract, and a pinch of salt. Blend until smooth.
  2. Heat your skillet: Heat a non-stick skillet over medium heat and add a little butter or oil for a non-stick effect.
  3. Pour the batter: Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  4. Serve and enjoy: Serve warm with your favorite toppings, be it fresh fruit, a dollop of yogurt, or a drizzle of honey!

Notes

You can substitute non-dairy milk and use certified gluten-free oats for a gluten-free option. Store leftovers in an airtight container for up to 3 days or freeze for up to a month.
