A quick and versatile chicken fried rice recipe that brings the flavors of Asia to your home kitchen.

Ingredients

  • 200 grams chicken, diced
  • 4 cups cooked rice (preferably day-old for best results)
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 23 spring onions, chopped
  • 2 cups mixed diced vegetables (frozen or fresh)
  • 2 tbsp cooking oil (sunflower, peanut, or vegetable oil)
  • 2 tsp sesame oil
  • 2 eggs, beaten
  • Salt to taste
  • 2 tbsp regular soy sauce
  • 2 tsp dark soy sauce
  • 23 tbsp oyster sauce
  • 1/2 tsp white pepper
  • 1 tbsp sugar

Instructions

  1. Heat the cooking oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and chopped onion, sautéing until fragrant.
  3. Cook the diced chicken until no longer pink and begins to brown.
  4. Stir in the mixed diced vegetables and cook for another 2-3 minutes.
  5. Push everything to one side and scramble the beaten eggs.
  6. Add the cooked rice, soy sauces, oyster sauce, white pepper, and sugar.
  7. Garnish with spring onions, and serve hot.

Notes

For fluffier rice, use day-old rice. Customize with your favorite proteins or vegetables.
