  • 1 lb chicken breast, diced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 cup mixed vegetables (like bell peppers, carrots, and broccoli)
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Marinate the chicken in a bowl with soy sauce, sesame oil, and diced chicken for 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat until fully cooked and golden brown, about 6-8 minutes.
  3. Create the spicy gochujang cream sauce by combining gochujang, mayonnaise, lime juice, and honey in a bowl; whisk until smooth.
  4. Prepare the mixed vegetables by sautéing them in the same skillet for about 3-4 minutes until tender but still crunchy.
  5. Assemble your bowls with a scoop of cooked rice, topped with chicken and sautéed vegetables.
  6. Drizzle the spicy gochujang cream sauce on top and garnish with green onions and sesame seeds.

Notes

Can substitute chicken with tofu or shrimp. Store leftovers separately in airtight containers.
