Fluffy and customizable pancakes perfect for breakfast or brunch.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the dry ingredients: In a mixing bowl, combine flour, sugar, baking powder, and salt. Whisk for an even mixture.
  2. Whisk the wet ingredients: In another bowl, whisk together milk, egg, melted butter, and vanilla extract until well-blended.
  3. Create the batter: Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are fine.
  4. Heat the skillet: Heat a non-stick skillet over medium heat. Pour 1/4 cup of the batter for each pancake.
  5. Cook and flip: Cook until bubbles form on the surface (2-3 minutes), then flip and cook until golden brown (1-2 more minutes).
  6. Serve and enjoy: Serve warm with your favorite toppings like syrup, berries, or whipped cream.

Notes

Perfectly pair pancakes with crispy bacon, yogurt, or a fruit salad. Store leftovers in an airtight container for up to 2 days or freeze for a month.
