A heartwarming dish filled with ground meat, rice, and tomatoes, all wrapped in vibrant bell peppers.

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 cup ground beef or turkey
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C) to get it nice and hot while you prepare your ingredients.
  2. Cut the tops off the bell peppers and remove the seeds. Keep them intact for stuffing later.
  3. Cook the chopped onion in a skillet until translucent, developing a lovely sweetness.
  4. Add the ground meat to the skillet with the onions and cook until browned, stirring occasionally.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Adjust seasoning as needed.
  6. Spoon the filling into each bell pepper, packing it well. Place in a baking dish.
  7. Top each pepper with shredded cheese.
  8. Cover the dish with foil and bake for 30 minutes to lock in moisture.
  9. Remove foil and bake for an additional 10-15 minutes until peppers are tender and cheese is melted.
  10. Serve warm and enjoy with friends and family!

Notes

Customize the filling with different proteins or make it vegetarian with beans and quinoa.
