A delightful and savory dish featuring chicken breasts stuffed with a creamy mixture of mushrooms, spinach, and cheese.

Ingredients

  • 4 chicken breasts
  • 2 cups mushrooms, chopped
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat, add garlic and mushrooms, and cook until tender (5-7 minutes).
  3. Stir in spinach and cook until wilted.
  4. Combine mushrooms, spinach, cream cheese, Parmesan, salt, and pepper in a bowl.
  5. Slice pockets into each chicken breast.
  6. Stuff the chicken with the mushroom mixture.
  7. Bake for 25-30 minutes or until chicken is cooked through.
  8. Serve hot and enjoy!

Notes

If using frozen spinach, be sure to squeeze out excess water before mixing. This dish can be stored for 3-4 days in the fridge.
