A delicious twist on classic French onion soup, combining caramelized onions, succulent chicken, and orzo pasta, all in one skillet.

  • 2 chicken breasts
  • 2 large onions, thinly sliced
  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1 tablespoon olive oil

Instructions

  1. Sauté the onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes, stirring occasionally.
  2. Sear the chicken: Season the chicken breasts with salt, pepper, and thyme. Push the onions to the side of the skillet and add the chicken. Sear until golden brown, about 5 minutes on each side.
  3. Combine ingredients: Add the orzo to the skillet and pour in the chicken broth. Stir everything together and bring to a boil.
  4. Simmer to perfection: Reduce the heat to low, cover, and simmer for about 10-12 minutes or until the orzo is tender and has absorbed most of the broth.
  5. Melt the cheese: In the last few minutes of cooking, sprinkle the shredded mozzarella on top and cover until melted.
  6. Serve and enjoy: Serve warm and garnish with fresh herbs if desired.
