Delightful squares of fluffy, sweet goodness, perfect for breakfast or brunch, topped with a creamy glaze.

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup buttermilk
  • 1/4 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glazing)
  • 2 tablespoons milk (for glazing)

Instructions

  1. Preheat your oven to 375°F (190°C) and thoroughly grease a square baking dish.
  2. Whisk together the flour, granulated sugar, baking powder, salt, and baking soda in a large mixing bowl.
  3. Combine the buttermilk, milk, eggs, melted butter, and vanilla extract in another bowl, whisking until blended.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Transfer the batter into the greased baking dish, spreading evenly.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Mix the powdered sugar and milk in a small bowl to create a smooth glaze.
  8. Drizzle the glaze over the warm beignet squares and allow to set before slicing.

Notes

These squares are best served fresh but can be stored in an airtight container for up to 2 days. They can also be refrigerated for up to a week.
