Delicious and vibrant Greek chicken bowls featuring marinated chicken, fresh veggies, and flavorful quinoa or rice.

Ingredients

  • 1 lb chicken breast
  • 2 cups cooked quinoa or rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken breast in a mixture of olive oil, red wine vinegar, oregano, salt, and pepper for at least 30 minutes.
  2. Cook the marinated chicken on a grill or pan over medium heat for about 6-7 minutes on each side until fully cooked.
  3. Rest the chicken for a few minutes before slicing it into tender strips.
  4. Layer cooked quinoa or rice in serving bowls, followed by diced cucumber, cherry tomatoes, red onion, feta cheese, and Kalamata olives.
  5. Top with sliced chicken.
  6. Drizzle additional olive oil and red wine vinegar over the bowls if desired.
  7. Serve immediately or store in meal prep containers for later use.

Notes

Best when served fresh but holds up well in meal prep. Marinate chicken overnight for enhanced flavor.
