A hearty and nourishing casserole packed with protein, made with chicken, cauliflower, and Greek yogurt for a creamy texture.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups cauliflower florets
  • 1 cup Greek yogurt
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the shredded chicken, cauliflower florets, Greek yogurt, cheese, chicken broth, olive oil, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Mix until all ingredients are well combined.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
  5. Sprinkle breadcrumbs on top if using.
  6. Bake for 25-30 minutes or until bubbly and golden.
  7. Cool for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days, or frozen for up to 2 months.
