A comforting and nutritious chicken and rice casserole filled with wholesome ingredients that the whole family will enjoy.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup brown rice
  • 2 cups chicken broth
  • 1 cup broccoli florets
  • 1 cup carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup low-fat cream of chicken soup
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C) so it’s ready for your casserole.
  2. Heat a drizzle of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and the onion has softened.
  3. Add the diced chicken breast to the skillet, cooking until it’s lightly browned on all sides.
  4. Stir in the broccoli, carrots, and brown rice, combining evenly.
  5. Pour in the chicken broth and cream of chicken soup, stirring until well combined. Season with salt and pepper.
  6. Transfer the mixture into a greased casserole dish, adding shredded cheese on top if desired.
  7. Cover the dish with foil and bake for 30-35 minutes, until the rice is tender and the chicken is fully cooked.
  8. Let the casserole cool slightly before serving.

Notes

Pairs well with a fresh garden salad or roasted green beans. Freezes well for up to 3 months.
