A comforting, hassle-free dish that combines the flavors of stuffed peppers in a simple skillet meal.

Ingredients

  • 1 pound ground turkey
  • 4 bell peppers, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup cooked rice or quinoa
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add diced onion and garlic, and sauté until translucent.
  3. Add ground turkey, cooking until browned.
  4. Stir in diced bell peppers, tomatoes, rice or quinoa, and Italian seasoning.
  5. Mix well and let it simmer for about 10 minutes.
  6. Season with salt and pepper to taste.
  7. Sprinkle cheese on top and cover until melted.
  8. Serve hot, and enjoy the deliciousness!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat as needed.
