  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 pounds potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C) to ensure the chicken cooks evenly and thoroughly.
  2. Mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper together in a bowl.
  3. Rub the mixture generously over the chicken breasts.
  4. Place the seasoned chicken breasts in a baking dish.
  5. Pour the chicken broth around the chicken in the dish.
  6. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Boil the chopped potatoes in salted water until tender, about 15 minutes.
  8. Drain the potatoes and mash them in a large bowl with butter and milk until creamy and smooth.
  9. Serve the chicken alongside the creamy mashed potatoes, drizzled with the pan sauce.
