A delicious and easy copycat recipe for the famous stuffed chicken, featuring a creamy cheese and spinach filling.

  • 2 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C) so it’s ready when your chicken is stuffed and seared to perfection.
  2. Prepare the filling by mixing together the chopped spinach, softened cream cheese, shredded mozzarella, grated Parmesan, minced garlic, Italian seasoning, and a sprinkle of salt and pepper.
  3. Stuff each chicken breast by carefully cutting a pocket and filling it with the cheese and spinach mixture.
  4. Sear the stuffed chicken breasts in a skillet over medium heat with olive oil for about 3-4 minutes on each side until golden brown.
  5. Bake the chicken in the preheated oven for 20-25 minutes or until cooked through and juices run clear.
  6. Rest the chicken for a few minutes before slicing and serving warm.

For a richer filling, consider adding sun-dried tomatoes or artichokes. Adjust the herbs and cheeses to your taste for variations.
