A delightful Italian Pear Cake made with ripe pears and almond flour, perfect for any gathering or cozy night in.

  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition, and stir in the vanilla extract.
  4. Whisk together the almond flour, all-purpose flour, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fold in the diced pears gently.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
  10. Dust with powdered sugar before serving if desired.
