A delightful, zesty dish featuring tender chicken cutlets coated in a rich lemon butter sauce.

  • 4 chicken cutlets
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1/4 cup unsalted butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Season the chicken cutlets generously with salt and pepper.
  2. Dredge each cutlet in flour, shaking off any excess.
  3. Prepare the egg mixture by beating the eggs with lemon juice.
  4. Heat the unsalted butter and olive oil in a skillet over medium heat.
  5. Dip each cutlet into the egg mixture and place in the skillet.
  6. Cook the cutlets for about 3-4 minutes on each side until golden brown.
  7. Keep the cooked cutlets warm on a plate.
  8. Create the lemon butter sauce by whisking any remaining lemon juice and butter in the skillet.
  9. Serve the sauce over the chicken and garnish with chopped parsley.
