4 salmon fillets
2 tablespoons lemon juice
4 tablespoons unsalted butter
2 teaspoons garlic, minced
Salt and pepper to taste
4 medium potatoes, diced
2 cups broccoli florets
Olive oil
Fresh parsley for garnish
Instructions
Preheat your oven to 400°F (200°C).
Toss the diced potatoes with olive oil, salt, and pepper, then spread them out on a baking sheet. Roast for about 20-25 minutes or until crispy and golden.
In a small saucepan, melt butter over low heat and whisk in lemon juice and minced garlic.
Season the salmon fillets with salt and pepper. In a skillet over medium-high heat, add olive oil and place the salmon, skin-side down. Cook for about 6 minutes until the skin is crispy. Flip and cook for an additional 2-3 minutes, drizzling lemon garlic butter over the top.
Add the broccoli to the baking sheet with potatoes during the last 10 minutes of roasting.
Serve the salmon alongside the crispy potatoes and roasted broccoli, drizzled with remaining lemon butter and garnished with fresh parsley.
Notes
For extra flavor, add some lemon zest to the butter. Feel free to substitute broccoli with asparagus or green beans.
