A simple and flavorful dish featuring crisp chicken fillets enveloped in a cheesy, lemon-infused crust, perfect for any gathering.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Romano cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Create a breading station: one plate for flour, a bowl with beaten eggs mixed with lemon juice, and a plate with grated Romano cheese.
  4. Dredge each chicken breast in flour, then dip it into the egg mixture, and roll it in Romano cheese.
  5. Heat olive oil in a large skillet over medium heat.
  6. Cook the chicken breasts for about 4-5 minutes per side until golden brown.
  7. Transfer the chicken to a baking dish and bake in the oven for 15-20 minutes.
  8. Garnish with chopped parsley and serve hot.

Notes

Let the chicken rest for a couple of minutes after cooking to retain moisture. You can substitute Romano cheese with Parmesan for a different flavor.
