4 large russet potatoes
1 pound shrimp, peeled and deveined
1 pound crab meat
1 cup cooked and crumbled bacon
1 cup cream cheese, softened
1/2 cup sour cream
1 cup shredded cheddar cheese
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1/4 cup green onions, chopped
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C). Wash the potatoes and prick them with a fork. Bake directly on the oven rack for about 45-60 minutes until tender.
Heat the olive oil in a skillet over medium heat. Add shrimp and crab, season, and cook for about 3-5 minutes.
Combine cream cheese, sour cream, cheddar cheese, and bacon in a bowl. Stir in seafood and half of the green onions.
Cut the baked potatoes in half lengthwise and scoop out some flesh without breaking the skin.
Mix the potato flesh into the seafood mixture and spoon it back into the potato skins.
Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes.
Garnish with remaining green onions before serving.
Notes
For a lighter version, use low-fat cheese and turkey bacon. Great served with a side salad.
