  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 cup cold water or beer
  • Optional: seafood or vegetables for frying

Instructions

  1. Combine the Dry Ingredients: In a bowl, mix the flour, cornstarch, baking powder, salt, paprika, and black pepper together until well blended.
  2. Whisk in Liquid: Gradually add the cold water or beer while whisking until the batter is smooth and thick.
  3. Heat the Oil: Heat oil in a deep pan to 350°F (175°C).
  4. Dip the Goodies: Dip your seafood or vegetables into the batter, allowing the excess to drip off.
  5. Fry to Perfection: Carefully place them in the hot oil and fry until golden brown and crispy, typically about 3-4 minutes.
  6. Drain and Serve: Remove with a slotted spoon and drain on paper towels before serving.

Notes

Serve with a zesty tartar sauce or remoulade for dipping. Store leftovers in an airtight container for up to two days.
