Soft, chewy cookies bursting with vibrant mint flavor and delicious chocolate chips.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mint chocolate chips
  • 1/2 teaspoon peppermint extract (optional)
  • Green food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla and optional peppermint extracts.
  4. Combine the flour, baking soda, and salt in another bowl, then gradually add to the creamed mixture.
  5. Fold in the mint chocolate chips and food coloring, if using.
  6. Scoop by rounded tablespoons onto ungreased cookie sheets, leaving space between each scoop.
  7. Bake for 10 to 12 minutes, or until edges are golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For added flavor, try mixing in chopped nuts or adjusting the amount of mint extract to your taste.
