  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced chicken and season with cumin, chili powder, salt, and pepper. Cook until golden brown, about 7-10 minutes.
  3. Stir in the cooked rice, black beans, corn, and salsa. Mix thoroughly and cook for another 5-7 minutes until heated through.
  4. Sprinkle cheese over the top, cover the skillet, and allow the cheese to melt.
  5. Serve warm, garnished with fresh cilantro if desired.
