A comforting and simple one-pot meal that combines ground beef, rice, and bell peppers, capturing the flavors of traditional stuffed peppers without the fuss.

Ingredients

  • 1 pound ground beef
  • 1 cup rice
  • 2 bell peppers, chopped
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • Salt and pepper to taste
  • Optional: shredded cheese, herbs for garnish

Instructions

  1. Brown the ground beef in a large skillet over medium heat; drain excess fat.
  2. Add diced onion and minced garlic; sauté until soft.
  3. Stir in chopped bell peppers and cook for another 2-3 minutes.
  4. Combine rice, diced tomatoes (with juice), and beef broth to the skillet.
  5. Season with salt and pepper; bring to a boil.
  6. Reduce heat to a simmer, cover, and cook until the rice is tender and the liquid is absorbed (about 20 minutes).
