  • 4 chicken breasts
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • Salt and pepper to taste
  • 1 tablespoon Italian seasoning
  • Olive oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the parmesan cheese, breadcrumbs, Italian seasoning, salt, and pepper together.
  3. Beat the eggs until smooth.
  4. Dip each chicken breast in the beaten eggs, then coat with the parmesan breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 4-5 minutes per side.
  7. Transfer the chicken to a baking dish and bake for 15-20 minutes or until cooked through.
  8. Serve hot and enjoy!

Notes

For a spicier version, add a pinch of red pepper flakes to the breadcrumb mixture. Don’t skip the resting period; let the chicken sit for a few minutes after baking to lock in juices.
