A refreshing summer salad that combines fresh kale, juicy peaches, and sweet blueberries with a honey-lemon vinaigrette.

Ingredients

Scale
  • 1 bunch Green kale
  • 2 Fresh peaches, sliced
  • 1 cup Blueberries
  • 2 tablespoons Honey
  • 2 tablespoons Lemon juice
  • 1/4 teaspoon Salt
  • 1/4 cup Pepitas
  • 2 tablespoons Olive oil

Instructions

  1. Remove the stems from the kale and chop it into bite-sized pieces.
  2. Combine the kale, sliced peaches, and blueberries in a large bowl.
  3. Whisk together honey, lemon juice, olive oil, and a pinch of salt in a small bowl.
  4. Drizzle the vinaigrette over the salad and toss gently to coat.
  5. Top with toasted pepitas for added crunch.
  6. Serve immediately or chill before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Massage the kale with olive oil for a softer texture.
