Delightful hand pies filled with juicy fresh peaches, wrapped in a flaky pastry for a perfect summer treat.

  • 1 pie crust (homemade or store-bought)
  • 2 cups fresh peaches, peeled and diced
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Oil for frying
  • Powdered sugar for dusting or glaze

Instructions

  1. Mix the diced peaches, sugar, cornstarch, vanilla extract, and lemon juice until well combined.
  2. Roll out your pie crust on a lightly floured surface to about 1/8 inch thick.
  3. Cut out circles using a round cutter or cup, aiming for about 4-5 inches in diameter.
  4. Place a small spoonful of the peach mixture in the center of each dough circle.
  5. Fold the crust over the filling and seal the edges with a fork.
  6. Heat oil in a frying pan over medium heat to partially submerge the hand pies.
  7. Fry the hand pies for 2-3 minutes on each side, until golden brown.
  8. Drain on paper towels and dust with powdered sugar or drizzle with glaze.

Notes

Serve these hand pies with vanilla ice cream or whipped cream. Store leftovers in an airtight container at room temperature for up to 2 days.
