A delightful dessert combining the creamy indulgence of cheesecake with the crunchy goodness of pecans and a buttery graham cracker crust.

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup pecans, chopped
  • 1 cup corn syrup
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan thoroughly.
  2. In a bowl, mix together the graham cracker crumbs, 1/4 cup of sugar, and melted butter until well combined. Press firmly into the bottom of the prepared baking pan.
  3. Beat the softened cream cheese until smooth and creamy. Gradually add in 1 cup of sugar and the vanilla extract; mix until well combined. Add in the eggs, one at a time, mixing thoroughly.
  4. Mix together the chopped pecans, corn syrup, brown sugar, and the remaining ingredients. Pour this pecan mixture over the cheesecake layer.
  5. Pop your pan into the preheated oven and bake for 40-45 minutes, or until set and slightly jiggly in the center.
  6. Allow the bars to cool at room temperature, then refrigerate for at least 2 hours before cutting into bars.

Notes

For an extra twist, add a swirl of chocolate or caramel to the cheesecake mixture before baking. Store leftovers in an airtight container in the refrigerator for up to one week or freeze for up to three months.
